Hello dear friends! It’s meal prep Sunday and I had to share with you my new recipe find! I took this idea from a couple different recipes, and made it my own. This will be lunch through the week! Enjoy!
Italian Roasted Chicken & Veggies
2 lbs chicken breast, cut into pieces
Peppers, onions (use whatever veggies you like here…I found some pre-cut fajita veggies at the store to save some time)
2 tsp garlic
1 tsp salt
½ tsp pepper
2 tsp basil
2 tsp marjoram
2 tsp rosemary
2 tsp thyme
1 tsp paprika
Preheat oven to 450.
Line baking sheets with aluminum foil.
Place chicken and vegetables even on the baking sheets. Spray with a little olive oil.
Mix spices together and sprinkle over the chicken & vegetables.
Bake 15-20 minutes, until chicken is cooked through; broil 1-2 minutes to brown the chicken.
Serve over rice if desired.
