Slow Cooker Pumpkin Spice Steel Cut Oatmeal

I’m trying out a new oatmeal recipe today, and my house smells so incredible that I knew I had to share it here. I can’t wait to enjoy it this week as we see the end of September and welcome some cooler temperatures…pumpkin-oatmealpumpkin-oatmeal-2

Slow Cooker Pumpkin Spice Steel Cut Oatmeal

  • 2 cups uncooked steel cut oats
  • 1 15 oz can pumpkin (not pumpkin pie filling)
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon salt
  • ¼ cup dark brown sugar, lightly packed
  • 6 cups water
  • 2 cups unsweetened almond milk
  • 1 tablespoon vanilla extract
  • pure maple syrup, dried cranberries, or chopped pecans for serving as desired

 

Instructions

  1. Place steel cut oats, canned pumpkin, pumpkin pie spice, salt, and brown sugar into the slow cooker.
  2. Next, stir in the water, almond milk, and vanilla extract.
  3. Put the lid on the slow cooker and set it to cook on low for 5 hours.
  4. Remove lid and let it sit for another 15 – 20 minutes.
  5. Serve with pure maple syrup, dried cranberries, or chopped pecans; can also add a little sweetener if desired

The nice thing about this kind of recipe is that it can be made completely ahead of time, portioned out, and stored in the refrigerator or freezer, reheating on the stove or in the microwave.
